The Billionaire Bride Pact books all feature recipes that are special to the characters in one way or another. Of them all, Rosa’s cornbread is my favorite and is perfect with a big bowl of chili on a cold winter night!
The Passionate One: Matt’s Mug Brownies
When Erin blows a big audition in The Passionate One, her best friend Matt whips up a mug brownie to make her feel better.
Matt’s Mug Brownies
3 Tbs all purpose flour
3 Tbs brown sugar
2 Tbs cocoa powder
3 Tbs vegetable oil
3 Tbs water
1 pinch of salt
1/2 tsp. vanilla
1/4 tsp. cinnamon
2 tsp. chocolate chips
Mix all ingredients together in a microwave safe mug. Microwave 45-60 seconds or until firm. Do not overcook. Top with your favorite toppings: peanut butter, whipped cream, ice cream, nuts, etc.
Cooking times will vary greatly depending on your microwave and the type of mug you use so always keep a close eye on your brownie while cooking.

The Rebellious One: Rosa’s Cornbread
Holly’s housekeeper, Rosa, is the only one who notices Holly’s conflicted feelings toward her forced marriage in The Rebellious One. On the night of an akward dinner party, she makes Holly’s favorite cornbread for dinner.
Rosa’s Cornbread
1/2 c. butter, softened to room temperature
2/3 c. sugar
3 large eggs
1 17oz can creamed corn
1 c. shredded cheese
1 c. flour
1 c. cornmeal
2 1/2 tsp. baking powder
1/4 tsp. salt
Mix together and pour into greased 9×13 pan. Bake at 325 degrees for 30 minutes or until the middle is set.

The Adventurous One: Empanadas
Taylor has traveled all over the world and sampled many different types of food. She especially loved the empanadas she found in Mexico right before she had to rush home to be with her ailing grandmother in The Adventurous One.
Genuine Mexican Empanadas
Filling:
15-20 apples, membrillos (quince), or peaches depending on the size of fruit
2 lbs of sugar
1 cinnamon stick
Peel, cut and take out seeds from the fruit. Put a pot on medium heat, add fruit and sugar and mix till sugar starts to melt, then put in a stick of cinnamon. Stir constantly so it does not stick to the pot, lower heat if necessary and keep stirring. As soon as you see the fruit falling apart, turn off heat, take out cinnamon stick and mash well with potato masher. Filling has to have a jelly like consistency. Set aside.
Empanadas:
2 lbs of flour
1 can or 12 oz of evaporated milk
2 large eggs
1 box of Maizena or 14 oz regular corn starch (Maizena found in the Hispanic food aisle)
1 Tbs of yeast
3 cups of sugar
2 Tbs of vanilla extract
1 lb lard
In a large mixing bowl, knead the lard till soft, and then add eggs, sugar and vanilla extract and mix well. Mix in flour, yeast and Maizena and mix well, then start pouring in the evaporated mix till you get a nice dough feel. Make ping pong size balls out of the dough and set aside.
Roll a ball of dough into 1/8 inch thick and cut with round, medium size cookie cutter. Fill with one tablespoon of the filling on one side and fold dough over the filling to make a half circle. With a fork, press the edges of the dough to seal top and bottom edges together.
Set empanadas on a cookie sheet, heat oven at 350 degrees Fahrenheit and bake for 15-20 min, or till golden brown.

The Glamorous One: Soda Fountain Shenanigans
There is no recipe for The Glamorous One because Kynley was too busy touring and writing music to cook. But she and Dalton had fun messing around with the add-ins at a gas station soda fountain, so of course I researched that. I recommend vanilla or cherry, but not in the fruit punch.

The Ambitious One: Lindsey’s Snickerdoodle Cupcakes
In The Ambitious One, Lindsey has spent years perfecting her recipes for Sugarbee’s, her specialty cupcake store in downtown Manhattan. Her snickerdoodle cupcakes are customer favorites.
Lindsey’s Snickerdoodle Cupcakes
1 1/2 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup melted butter (1 stick)
1 1/4 cup granulated sugar
2 eggs, room temp.
1 tsp vanilla extract
1/4 almond extract
3/4 c. milk, whole or 2 percent
Preheat oven to 350. Whisk first four dry ingredients, make sure there are no clumps. Combine remaining wet ingredients in a separate bowl before mixing in with dry ingredients. Pour batter into liners and bake for 20-25 min.
Cinnamon Cream Cheese Frosting
4 cups powdered sugar
1/2 cup butter, softened
8 oz. cream cheese, softened
3 tsp. vanilla
1 tsp. cinnamon
Cream the butter, cream cheese, and vanilla until light and fluffy, about two minutes. Add powdered sugar and cinnamon and beat until fully incorporated.
